[Kid Tested, Mom Approved! - Link Up] Apple Zucchini Mini Muffins

Welcome back to our Link Up Party!  Today we are linking up over at Meet the Sullivans with our favorite meals for our minis!
While my favorite go-to meals for Ashlynn that she loves and we love include our Veggie Lasagna and Creamy Orzo with Asparagus (aka our version of Mac and Cheese).  However, since I had to share something new and showing you a scrambled egg with some mini waffles with cream cheese just wasn't going to cut it, I decided to go with something Fall flavored that everyone can enjoy - Apple Zucchini Mini Muffins!



We were given five or so zucchini's from our friend's dad's garden, one of them being bigger than a eggplant or butternut squash... no really, look.



Anyway.  I first whipped up two very large loaves of zucchini bread and 6 muffins and still had at least half left over.  So this weekend, I decided to make them a little more fall flavored and bite size which is perfect for giving to Ashlynn with her eggs and fruit for breakfast or as a snack in the afternoon.

This recipe yields a lot of batter, I was able to get 24 mini muffins and a loaf of Apple Zucchini Bread too (baked at 350 for 1 hour).


Ingredients:

1 Egg
2 Egg Whites
1/3 C Vegetable Oil
2/3 C Skim Milk
2 C Sugar
2 C grated zucchini (packed) 
2 Apples (cored, peeled, and diced)
1 tsp Vanilla
3 C Flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp ginger
1 tsp cinnamon


Directions:
  1. Preheat oven to 400 degrees
  2. Grease mini muffin pan
  3. Combine egg, egg whites, oil, milk, and sugar in large bowl
  4. Stir in grated zucchini, apples, and vanilla
  5. Separately, sift flour, baking soda, baking powder, salt, ginger, and cinnamon
  6. Add flour mixture to zucchini mixture and mix
  7. Bake for 13-15 minutes

I skipped it for the muffins, but topped the bread with some extra cinnamon and sugar, which looked as good as it tastes.  And there you have it, a bite sized breakfast treat that's packed with fruit and veggies and delicious too!  Enjoy!

  14. I made these yesterday! They turned out great and Noah loved them! I made 24 muffins and I was wondering if you end up freezing any or just make sure to eat a lot of them while fresh?
