[Recipe Share] Salsa Verde Chicken Tostadas

A post on Sunday?  It must be Recipe Share time!

After posting some foodgrams and getting some recipe requests I thought I'd finally share the recipes and links here.

My mom used to make a salsa verde enchilada that was amazing, when I saw this recipe pop up on Skinny Taste a few weeks ago, I decided I had to try it myself.  I pretty much followed the recipe to a T with only a few changes.


Crockpot Chicken
1lb organic chicken breast
1/4 tsp garlic powder
1/8 tsp oregano
1/8 tsp cumin
16 oz roasted salsa verde (I also used the same Archer Farms salsa as used in the recipe)

1 C shredded red cabbage
2 tsp lime juice
salt, to taste
2 C crock pot chicken (made above)
tostada (corn) shells
shredded cheddar, to taste
jalapeño slices


Place chicken in crockpot and season with spices.  Cover with salsa verde and cook on high for 3.5.-4 hours.  Remove chicken and shred with two forks.  Remove half of the salsa from the crock pot, save if you like.  Return shredded chicken to crockpot and mix with remaining salsa.  Turn heat to warm and cover.

Preheat oven to 350.

Thinly slice red cabbage and add lime juice and salt.  Original recipe calls for cilantro, but the Husband and I aren't strong fans so we omitted.  Place corn tostada shells on baking sheet and layer salsa verde chicken, cheese, and jalapeño slices.  Bake for 5 minutes, until cheese is melted and shells are crisp. Top with cabbage.  Enjoy!
