I linked this recipe in my last Dairy Free post, but I made them again last night and they are too good not repost and share separately.
Warning: These doughnuts require self control. You have been warned!
Recipe Adapted from King Arthur Flour Blog
Ingredients
1/2 C Vegetable Oil
3 Large Eggs
1 1/2 C Granulated Sugar
1 Can Pumpkin
1 1/2 Teaspoons Pumpkin Pie Spice
1 1/2 Teaspoons Salt
1 1/2 Teaspoons Baking Powder
1 3/4 C + 2 Tablespoons Flour
Cinnamon Sugar
Directions:
Preheat oven to 350 degrees.
Add all ingredients, but flour to mixer and mix until smooth.
Add in flour slowly, mixing until smooth.
Fill greased doughnut pan 3/4 full.
Bake for 15-18 minutes.
Remove the doughnuts from the oven and after 5 minutes remove from pan and place on cooling rack.
While doughnuts are still warm, place in bag of cinnamon sugar and shake to coat.
yields approximately 18

ReplyDeleteI wanted to get one at crate and barrel, I think it was like $10. I ended up grabbing one at Target for $14 one day because I just had to make these!
