[Recipe Share Sunday] Leftover Throwback

I thought today would be the perfect opportunity to repost an old post from two years ago.  If you hosted Thanksgiving, or got stuck taking home way too many leftovers, here's a great way to refresh all that stuffing!

Looking for a new way to serve those Thanksgiving leftovers?


Earlier in the month at my "Dinnerless" Dinner Party, I made these great Stuffing Stuffed Mushrooms as hors d'oeuvres . They were so easy to make and very tasty! I'll definitely be doing this again with all the stuffing that's hanging out in my fridge.

Ingredients
2 cups leftover stuffing
1 cup grated provolone cheese (about 3 ounces)
1 large egg, lightly beaten
1/4 cup chopped fresh parsley
1/4 cup chopped fresh basil
1/4 cup green onions, chopped
1 tablespoon olive oil (optional)
18 large button mushrooms (about 1 pound), stems removed


Preparation
Preheat oven to 400°F. Break up stuffing into bowl. Add 3/4 cup cheese, egg, parsley, basil, and green onions; mix well. If mixture seems dry, add 1 tablespoon olive oil to moisten. Season with salt and pepper.

Scoop out center of mushroom caps using small spoon. Fill each mushroom with stuffing; place on rimmed baking sheet. Drizzle with olive oil and sprinkle with remaining 1/4 cup cheese. Bake until stuffing is golden brown on top, about 15 minutes. Serve hot or at room temperature. (Can be made 2 hours ahead. Let stand covered at room temperature.)

Under the Covers ... Happy Gobble Gobble Day Ya'll

I'm Here! I'm Here!  

No I didn't run away to Occupy Wall Street, instead I decided to "Occupy Comfy Spots" for the last two months or so... or however long its been since my last post.   I took a note from B-Boy and snuggled in...



It seems like there is so much to catch up on.... 


After a year, where I thought we'd have little to be thankful for today - after suffering through a personal loss and subsequent struggles, the loss of my last living grandparent, and now even the impending loss of my job (my department, and entire building is being relocated - to Boston, which has kept me busy and away from the blogging as much as my snuggly blankets) all in the last 12 months... it's truly is a miracle that we found a something to be thankful for in addition to our good health and wonderful family and friends.

I hope all you readers have a wonderful Thanksgiving!  Enjoy the turkey!
