[Recipe Share Sunday] Low Fat Zucchini Bread

You may remember, this is one of the many things I baked up last weekend and it's a bit amusing where the recipe comes from.... my 7th grade Home Ec class!

Ha.

That's right readers, I'm almost positive this was the first thing we learned to bake.   It was so good, so I brought the recipe home for my mom and we've been making it ever since.


Low Fat Zucchini Bread

Ingredients:
1 Egg
2 Egg Whites
1/3 C Vegetable Oil
2/3 C Skim Milk
2 C Sugar
2 C grated zucchini (packed)  - about 1 LARGE zucchini or two smaller ones
1 tsp Vanilla
3 C Flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp ginger
1 tsp cinnamon

Directions:
  1. Preheat oven to 350
  2. Grease bread pan
  3. Combine egg, egg whites, oil, milk, and sugar in large bowl
  4. Stir in grated zucchini and vanilla
  5. Separately, sift flour, baking soda, baking powder, salt, ginger, and cinnamon
  6. Add flour mixture to zucchini mixture and mix
  7. Bake for 1 hour.
