Recipe Share Sunday: Buckeye Balls

These are pretty common, but one thing is for sure... PEOPLE FREAKING LOVE THEM!

I gave out three tins of assorted cookies tonight to family at my dad's holiday dinner, and the buckeye balls were gone in less then 5 minutes. All of them. True Story.

Again, these are a no-bake treat and seriously, who doesn't like chocolate and peanut butter?!

1 12oz Jar Creamy Peanut Butter
1/2 C Butter
1 tsp. Vanilla extract
1lb Powdered Sugar
12 oz Semi Sweet Chocolate Chips
2 Tbsp Shortening

  • Mix peanut butter, butter, vanilla, and powdered sugar in a large bowl (I find using a pastry blender works best)
  • Line cookie sheet with wax paper
  • Roll peanut butter into balls with diameter between 1/2"-1"
  • Set in fridge to chill
  • While peanut butter mixture chills, melt together chocolate chips and shortening.
  • Remove peanut butter balls from fridge poke with toothpick and dip in melted chocolate returning to wax paper.
  • Chill to preserve.
